i love coconut oil. (tried and true recipe!)

It's awesome stuff!

I had to buy it at Trader Joe's for a recipe a while back and only ended up using a tablespoon of the jar. I found it in the back of my cupboard last week and looked up some recipes using coconut oil and discovered that this stuff is AWESOME! (I really like the word awesome.)

Look at all the stuff it's used for!

So far, I haven't ventured into putting it in anything other than food (kind of weird to me to slather it on my skin or hair, but I may be willing to try if someone I actually know can vouch for it!). I started here and have several of these recipes bookmarked.

The one that's blown my mind is the Super Moist Banana Bread recipe.

It's NO JOKE. Super moist. Yummy. I could eat it ALL DAY.

This was the very last piece of the loaf. I had hidden it away from the kids in the morning at breakfast so that I could have it with my afternoon iced coffee. :)

I just used a brick of cream cheese and basically you just mix it all together. And bake it. And then eat it. YUM.

ooo i can't wait to try this! i just bought a jar of coconut oil, too. i was surprised at how caloric coconut oil is though. i guess it's not worse* than butter (calorie-wise).. :) thanks for the recipe, kathy!
