tried and true recipe: my new go-to salad dressing

We love lunch.

I really like preparing lunch because I love repurposing leftovers and not letting food go to waste. Feel so good to use everything up!

I usually do this in one of 3 ways:

  1. eat leftovers as-is (just heat up whatever dinner was leftover in the microwave)
  2. make an egg scramble (toss leftovers into egg and cook it up to eat with rice)
  3. toss it into a salad!
For example, last night we had chicken skewers and green bean and potato salad. The leftovers are going into a salad today with some other goodies (like garbanzo beans and fritos!), tossed with this honey mustard dressing and lunch is done! 

Shame on me, I even serve this kind of leftovers-redone meal to friends (sorry Aileen!)

I still use the dressings I posted here, but have grown accustomed to making this one (instead of the honey mustard one from before) because it's SO EASY. 3 ingredients!!!

Honey-Mustard Dressing 
(from Alton Brown)

5 T. honey
3 T. dijon mustard
2 T. rice vinegar

Shake it up in a jar and toss with salad. We like it on salads that have kidney beans, garbanzo beans, fritos, romaine, spinach, tomatoes, carrots, avocados... whatever's leftover from last night's dinner...
