Sick Saturday


Jonas, Penny and Jeff are all sick.

I have a bit of a sore throat.

It's sad to be sick and have to stay in when the weather is so beautiful and warm.

But we're ok... we still have fun together. We like each other a lot.


See? Happy, despite all the snot.

joy & contentment


For Christmas last year, a good friend of mine gave me this little pink book on Joy.

Initially, I wasn't SO excited about it... Maybe because my husband is so hard-core about theology and such, but it seems that devotional books, especially those that are pink and geared towards women, tend to be a bit fluffy and not enough Jesus.

I was totally wrong about this one. This is an instance in which you really shouldn't judge a book by its cover.

As recommended by Rondi Lauterbach (wife of Pastor Mark Lauterbach of Grace Church in San Diego), I've found it really helpful to start my "quiet time" in the mornings with a "Jesus appetizer"-- something short and sweet to just help me focus on Christ so that when I get into the Bible, I'm less distracted by the constantly-growing list of things I need to get done.

These books by Lydia Brownback have been perfect for that. The devotionals are short, sweet, and are VERY Jesus-focused. And God has really taught me so much about joy and contentment through the insights of this very wise and godly lady (thanks Ms. Brownback!)

Anyway, I've already recommended them to a LOT of people at Christ Church (seriously, I should be getting paid by the people at Crossway) but thought I'd throw these up on the blog as well because, like I said before, they're really really good. I'm now reading the Contentment one...

(In fact, they'd make GREAT Mother's Day gifts! Along with some flowers because flowers make everything extra special.)

Weekly Meal Plan #4

And it's the last week of April. How the heck did that happen?!

I really did not do a good job of sticking to our menu plan last week. On Tuesday, we got invited to dinner and on Thursday I used the sausage I was going to use for bangers & mash to make pasta instead. We got to go out for sushi on Saturday (thanks Mimi and Papa!!!) and Sunday night we had a lovely dinner with some lovely folks.

This is the last week of the month which means that I need to be very conscious of our budget for groceries. I have $85 left in our grocery budget for the month (which is actually pretty good-- in the past I've had to make do with less than $40 for the last week!) Thankfully, we have leftovers from Easter dinner that I'll repurpose...

  • Monday: Turkey Cranberry or "Christmas" sandwiches (leftover turkey from Easter dinner!)
  • Tuesday: Split Pea soup (leftover ham and ham bone from Easter dinner again!)
  • Wednesday: Homegroup dinner at the Choi's
  • Thursday: Black Bean Enchiladas (Vegan because we're having dinner with our favorite vegan gal, Tawney)
  • Friday: Steamed Fish and Vegetables with Rice
  • Saturday: Dinner out! No cooking for me! :)
  • Sunday: Leftovers
I'm SO excited to have a ham bone to cook with this week. :)

    Easter outfits

    One of my April goals was to make Penny an Easter dress.

    I used this pattern and (thankfully) it fit perfectly. I didn't like the scoop neckline on the pattern so opted for a higher, almost boatneck style. The pattern was really easy to follow and I made the dress, a headband and a bow-tie for Jonas with 1 yard! Yay for only spending $7 for Easter outfits!

    Weekly Meal Plan #3

    Week #2 went pretty much as planned, except that I traded our Thursday (meatballs) for Saturday (leftovers) because we had a frozen pizza in the refrigerator and that was much easier to make on Thursday when I didn't feel like cooking. Yay.

    This week ends with Easter. I love Easter. Easter eggs, ham, peeps, pastel colors, bow-ties and dresses... but mostly I love the amazing and awesome resurrection of Christ.
    • Monday: Take-out leftovers from yesterday
    • Tuesday: "Bangers & Mash"-- saw a recipe for this in the latest Everyday Food
    • Wednesday: (HG Night) Chili & Cornbread (Leftover from Week #2-- I always make double for chili and freeze some!)
    • Thursday: Salmon with Brown Sugar and Mustard, Broccoli Rabe and Rice
    • Friday: (Good Friday) Beef Barley Vegetable Stew
    • Saturday: Jeff's parents in town-- we'll probably eat out.
    • Sunday: Easter dinner! Honeybaked Ham and Turkey, Lemony-garlicky green beans, Dinner rolls, Balsamic Onions... YUM!

    Steak Sandwiches with Sauteed Apples, Onions and Spinach

    Good. I promise!

    (From Everyday Food magazine)

    You'll need:
    -vegetable oil
    -NY strip steaks (I used one that was a bit more than half a pound, and I was able to make 2 sandwiches for both Jeff and me.)
    -salt and pepper
    -1 medium onion, sliced thin
    -1/2 an apple, cored and sliced thin
    -1 T. red-wine or white-wine vinegar
    -1 bag (10 oz) baby spinach
    -grainy, Dijon mustard
    -8 slices of crusty bread, toasted

    1. In a large skillet, heat 1 t. vegetable oil over medium-high. Season the steaks on both sides with salt and pepper. Cook until medium-rare, about 5 minutes per side, flipping once. Transfer to a plate and tent loosely with foil to keep it warm.
    2. Add onion to pan and season with salt and pepper. Cook until the onion begins to soften, about 4-5 minutes. Add apples and season again. Cook until the onions and apples start to get caramelized (about 5-7 minutes). If you want this to be a bit more caramel-y and brown, sprinkle a bit of sugar over them while they're cooking. Add vinegar and any accumulated steak juices and cook until that liquid has just evaporated, about a minute. Transfer the apples and onions to a bowl and add spinach to the pan. Season with salt and pepper and cook and stir until the spinach has wilted, about 3 minutes.
    3. Thinly slice steaks against the grain. Spread mustard on 4 slices of bread. Top with steak, onions and apples, and spinach. Top with remaining bread and serve immediately.

    A very stubborn little gal.






    But, oh, how we adore her. :)

    We're really really trying to get her to take the bottle. Lots of fussing, crying, pumping (for me) over here. 

    If you think of us, please pray that Penny will take the bottle, that my body will get more used to not nursing so much, that Jeff will continue to be patient with both of us, and that Jonas will stay in his bed when he's supposed to.

    Update: Thanks for praying! Penny's taken three bottles so far today! Yay! It's looking like I may be able to go to the Women's Retreat without her. Hooray! :)

    Weekly Meal Plan #2


    So week 1 went pretty much as planned, except that we ended up NOT having turkey meatballs on Thursday because I set aside some baked potatoes from Wednesday and we had those with green beans instead. Oh, and also I didn't have time to pick up mushrooms for steak sandwiches yesterday so I made caramelized onions and APPLES to go on top of the steak on the sandwiches and it was AWESOME (Jeff liked them so much he took a picture, above). I'll have to post that recipe sometime because they really were very good.


    This week's plan is:

    • Monday: Chicken Tostada Salads
    • Tuesday: African Sweet Potato Stew with Red Beans (We're having dinner with Tawney and Cameron and I'm making a vegan-friendly meal for them.)
    • Wednesday: In-N-Out with our homegroup! YAY~! 
    • Thursday: Asian Turkey Meatballs with Broccoli and Rice (carried over from last week)
    • Friday: Chili and Cornbread (We're taking food over for the Yokes and Ryan requested chili dogs!)
    • Saturday: Leftovers or eat out
    • Sunday: We rescheduled dinner with the Chungs for next week.

    Someone asked me this week if I cook other meals ( like breakfast and lunch) throughout the week as well. We generally eat the same things for breakfast each day (cinnamon toast, bagels, waffles, or granola). For lunch, I'll usually prepare leftovers from the night before, or we always have bean burrito/quesadilla stuff on hand. Sometimes I'll cook something up for lunch, but usually it involves re-cooking/re-inventing our leftovers (ie: stir-frys, fried rice, fritattas).

    Weekly Meal Plan #1



    This week is a busy one because the last two weeks Jeff's been out of town and we haven't been able to have people over as much as we like to. And, since it's the beginning of the month (yay!), our grocery budget allows me to cook different things (as opposed to the end of the month when I'm trying to pull together meals with the last of our grocery funds for the month-- hello, eggs and potatoes!)

    Here's our plan for the week:

    • Monday: Spaghetti with Meat Sauce
    • Tuesday: Butter-Fried Fish and Roasted Asparagus
    • Wednesday: Twice-baked Potatoes (we'll take these to homegroup for potluck dinner)
    • Thursday: Turkey Meatballs and Green beans with Rice
    • Friday: Cheddar Corn Chowder
    • Saturday: Steak Sandwiches with Mushrooms and spinach
    • Sunday: Leftovers/Dinner @ the Chungs'
    With meals that don't have a planned vegetable side, we'll probably have a salad as well.

    April goals

    Sick Jonas, busy (and a bit stressed out) Jeff, almost-all-better-but-not-quite-100% Kathy, 7-month-old Penny = tired family. I am working on finding joy in relinquishing my self-reliance and casting all my anxieties on God who cares for us perfectly and knows each of our needs.

    My goals for April:

    • clean up our backyard (pictures coming soon; it's a MESS and with the weather warming up, we'd love to make it into a space that we can hang out it and Jonas can play in)
    • blog my weekly menu plans (starting next week!)
    • make springtime/Easter outfits for the kids (I'm going to make them wear coordinating outfits as much as I can before Jonas starts to protest.)
    • have at least one 15+minute phone conversation each week with faraway friends (if you want to talk to me on the phone, let me know!)
    I'm looking forward to doing work outside and learning how to do some gardening. I'm also excited to get back into a bit of sewing... my sewing machine has definitely been feeling a bit neglected.
