Gnocchi with Bacon and Tomato (from Everyday Food Magazine)
4-6 slices of bacon (please please use the bacon from Trader Joes because it's really good.), thinly sliced
3-5 tomatoes, cored and diced
Garlic (about 2-3 cloves), minced
1/2 teaspoon red-pepper flakes (optional: if Jonas is eating, I leave this out.)
Potato Gnocchi (I buy the whole-wheat gnocchi package at Trader Joes)
Parmesan (grated or shaved)
salt and pepper
In a big skillet, cook the bacon over medium-high until crisp. Drain the bacon on paper towels and pour out some of the grease from the skillet, but make sure to leave about 2 teaspoons.
Add the tomatoes, garlic, red-pepper flakes and salt and pepper to taste. Cook until the tomatoes begin to break down and the sauce fragrant and chunky (5-7 minutes).
While the sauce is cooking, boil (2 minutes) and drain the gnocchi.
Add the gnocchi and bacon to the tomato sauce and toss until the gnocchi are heated through. Serve immediately with chopped parsley sprinkled on top and parmesan cheese to taste.
