Tried & True Recipe #3: BBQ Chicken Pizza

Easy-peasy! Love this one from the Pioneer Woman.

BBQ Chicken Pizza
1 Trader Joe's ready-made pizza dough (we usually get the whole wheat)
2 boneless, skinless chicken breasts
BBQ sauce (we always use Sweet Baby Ray's cause it's finger-lickin' good)
Olive Oil
1 lb. fresh mozzarella cheese (the log kind, or you can get the kind in the plastic tubs, sitting in water), sliced
1/2 of a red onion sliced really thin
Cilantro, chopped

Preheat oven to 375 degrees. Salt the chicken and put it in a casserole dish. Pour about 1/2 cup of bbq sauce over the chicken and bake for 20-25 minutes, until chicken is done. Remove from oven and dice the chicken. (So I usually do this earlier on, especially if we're eating this with company, to save time later.)

Set the oven temp at 500 degrees.

Drizzle and spread some olive oil on a baking sheet. Stretch out the pizza dough-- the thinner the better. Lay it on top of the baking sheet and drizzle the pizza dough with a little bit of olive oil and sprinkle some salt. Spread some bbq sauce on the dough (to your taste), and then put the sliced mozzarella on. Next add on the chicken and the onions. Bake it all for about 15 minutes, until the cheese is bubbly and crust is a nice color. After you take it out of the oven, add the cilantro (to taste).
